What does this MR do and why?

Front :

• use new "name" field of structureType documents instead of enum (data should be in database + easier to add or edit structure types)

Back : MR : pamn_server!343 (merged)

• New structure types list : https://service-numerique-metropole.notion.site/Liste-type-structure-4a22e11e9f7243e9a3a42eca2b4b0d58
• Update structures with new structure types where old structure types have been mapped to new ones
• Delete obsolete structure types and for those that haven't been mapped, remove their id from the structures they were linked to
• Use this script to change value mdm to mdml for #298 (closed)
